
These birthday rice krispie treats are absolutely delicious with an addictive fudgy texture paired with a perfect amount of crunch from the rice krispies all dipped in creamy, rich white chocolate & topped with sprinkles to look the part!

I am SO excited to share this recipe with you! These birthday rice krispie treats are fudgy with a crunch & packed with beloved birthday cake flavour from the almond extract used! This recipe was inspired by my NO BAKE PEANUT BUTTER CHOCOLATE CRUNCH BARS! Which are a peanut butter chocolate collagen no bake bar that is also delicious if you are into that!

HOW TO MAKE THESE Birthday Rice Krispie Treats VEGAN
It is super simple, simply omit the collagen! This recipe works great with or without it. I don’t recommend using protein powder in place of the collagen as it could change the overall flavour of the bars. Feel free to experiment if you wish & definitely let me know how they turn out if you do try it with a certain protein powder!
Ingredients you will need for THESE Birthday Rice Krispie Treats
No bake birthday cake bars
- all-natural cashew butter (or nut/seed butter of choice)
- maple syrup
- coconut oil, melted
- coconut sugar
- collagen (optional, omit for vegan)
- sea salt
- almond extract (key for that birthday cake flavour)
- vanilla extract
- brown rice cereal (I used gluten-free brown rice cereal)
White Chocolate Topping
- white chocolate chips (I like these or you can also use regular chocolate chips as well. Here is a vegan white chocolate option)
- coconut oil, melted
- almond extract
- Sprinkles

HOW TO MAKE THESE Birthday Rice Krispie Treats GLUTEN-FREE
You are going to want to make sure you’re using a certified gluten-free rice krispie if you wish to keep these gluten-free. I used a brown rice cereal which resemble rice crispies, but is gluten-free & they worked great. You can also make them with gluten-free Chex or gluten-free Cheerios if you want to mix up the cereal you are using for a different texture. Definitely let me know if you get creative & what cereal you use in these bars!
MIX IT UP THE INGREDIENTS
Like I mentioned above, get creative with the cereal you use in this recipe. Most will work & offer a slightly different texture & flavour profile.
You can also try using different nut or seed butters. If you want to try making them nut-free you can try sunflower seed butter. I think these would also be great with almond or peanut butter as well! If you try any different combos out, be sure to leave a comment & let me know how it turned out!
HOW TO STORE THESE Birthday Rice Krispie Treats
I like to store these in the fridge or the freezer in an air-sealed container or re-usable bag like a Stasher bag. If you store them in the freezer they will last longer, however you may need to take them out a few minutes before you enjoy them depending on how cold your freezer is & how hard the bars get.
LET’S MAKE THEM!
You are going to start by mixing the cashew butter, maple syrup, & melted coconut oil until smooth.
Mix in the collagen if you’re using it & along with the other ingredients, including the cereal & then allow the mixture to firm up in the freezer while you make the topping.
The final product is a deliciously fudgey yet crunchy texture from the cereal & each bite is bursting with a rich chocolate flavour as well!

Ingredients
No bake birthday cake bars
- 2/3 cup all-natural cashew butter (or nut/seed butter of choice)
- 3 tbsp maple syrup
- 3 tbsp coconut oil, melted
- 1 tbsp coconut sugar
- 1/4 cup collagen (optional, omit for vegan)
- 1/4 tsp sea salt
- 1 + 1/2 tsp almond extract (key for that birthday cake flavour)
- 1/2 tsp vanilla extract
- 1 + 1/2 cups of brown rice cereal (I used gluten-free brown rice cereal)
White Chocolate Topping
- 1/2 cup white chocolate chips (I like these or you can also use regular chocolate chips as well. Here is a vegan white chocolate option)
- 1 tsp coconut oil, melted
- 1/4 tsp almond extract
- Sprinkles
Instructions
- Mix the cashew butter (or nut/seed butter or choice), maple syrup, coconut oil until smooth.
- Then mix in the rest of the bar ingredients, collagen (if using) & brown rice cereal.
- Line a loaf pan (for thick bars) or square baking dish (for thinner bars) with parchment paper & spread the mixture into the pan.
- Chill while you make the white chocolate topping.
- Melt the white chocolate chips with the coconut oil in the microwave in 30 second intervals, mixing after each time, until smooth. Alternatively, you can melt the chocolate over low in a small saucepan on the stove until smooth.
- Add the almond extract.
- Allow the bars to firm up enough to cut them & dip them into the white chocolate mixture.
- Top with a few sprinkles right after, before the chocolate hardens.
- Place in the freezer for 1-3 hours or until firm.
- Store in the fridge or freezer, enjoy!
