If you have watched my IG stories recently or keep up with me on the ‘gram, you will know that I have a full on addiction to Go Macro Bars. However, they cost a pretty penny. I decided to formulate my own homemade version of Go Macro bars & I am SO happy with the final result. These copycat Go Macro bars are vegan, gluten, dairy & refined sugar-free & I hope you love them as much as I do!

Fuel up with these copycat Go Macro bars

These bars pack a punch. They have a good source of protein & healthy fats. The original Go Macro bars are sweetened with brown rice syrup so I tried to stick to those ingredients as much as possible, hence the brown rice syrup in this recipe.

What’s the deal with brown rice syrup?

It is a sweetener that comes from, you guessed it, brown rice! It is thicker than maple syrup, somewhat similar to the consistency of honey. This sweetener is not suitable for a low-carb diet or diabetics as it is pretty much 100% glucose. So why would I want to use this in a recipe? Glucose is used by every cell in your body as a means of energy. A sweetener like this is great before or after a workout. I usually would have a Go Macro bar surrounding my workouts because I know my body is able to utilize that glucose most optimally then. That being said it has a high GI (glycemic index) so if you’re following a low-carb or low-sugar diet, I wouldn’t recommend using this sweetener. In moderation, like these, bars it works well for me.

Lower-carb + lower-sugar option

Although, I have only tested this recipe with brown rice syrup, you could definitely try using a lower-carb & sugar liquid sweetener, like Lakanto maple syrup. Again, I have only tried this recipe using brown rice syrup so if you make any subs to the recipe, definitely let me know!

Copycat Go Macro Bars

Only 7 ingredients needed to make copycat Go Macro bars

  • Brown rice syrup
  • All-natural peanut butter
  • Vanilla extract
  • Pink salt
  • Sprouted brown rice protein powder (I used this one)
  • Rice crispies (make sure they are certified gluten-free to keep these bars gluten-free)
  • Dark chocolate chips (I like these dairy-free ones)

Try a nut-free version

Can’t do nuts? Try using sunflower seed butter. I love it for nut-free baking. I haven’t tried it in this recipe in particular but if you give it a go, let me know how it turns out in the comments below!

Don’t hold back on your creativity with this recipe either! Mix up the nut or seed butters you’re using, change up the add-in’s. Make it your own! I personally love this peanut butter chocolate chip flavour but I definitely plan on switching it up from time to time too!

How to make copycat Go Macro bars

  1. In a large mixing bowl add the brown rice syrup & peanut butter, until combined.
  2. Add in the vanilla & pink salt.
  3. Then add in the protein.
  4. Mix in the rice crispies & dark chocolate chips, gently. I added 1/2 cup into the mixture & then evenly spread the other 1/2 cup over top, pushing them in firmly.
  5. In a rectangular baking dish or pan, lined with parchment paper spread the Go Macro bar mixture into the dish, pressing it firmly & evenly.
  6. Feel free to add the other 1/2 cup of rice crispies & a few more dark chocolate chips to the top, pressing them in well.
  7. Place the bars in the fridge for at least 30-60 minutes until they have firmed up.
  8. Slice into bars, store in the fridge & enjoy!

I would say about a week but you could try freezing them as well & taking them out a day or two before you want to eat one! I haven’t froze them before so let me know if you do!

Love these!! I used a 1/2 cup of maple syrup instead and they held up great! Not quite the same chew as a gomacro but dang close!!

The recipe looks amazing and I can’t wait to try them! The only thing I didn’t like about the recipe was when you said “the ‘gram”. Haha, but then again I have an elderly mindset. Thanks Lauren! 🙂
