NOURISHING + EASY GLUTEN + DAIRY-FREE TUNA NOODLE CASSEROLE
This easy gluten + dairy-free tuna noodle casserole is full of nourishing ingredients such as onion, mushrooms, garlic, broccoli, & peas! It is also a great base to add whatever veggies you have on hand as well! Got some spinach that’s coming to its end? Throw it into the mix! It wilts up & becomes very small so you likely won’t even notice it is there & the dish will still be wonderful! I also love to throw cauliflower, carrots & more into this recipe! It works great with frozen veggies as well.
MAKE IT ONCE & EAT ALL WEEK
I love making this gluten + dairy-free tuna noodle casserole at the start of the week & keeping it in the fridge for a meal in a pinch! It can easily be re-heated for leftover the next day. I even find it tastes better the next day, so I definitely recommend making extra to have for leftovers!
I will re-heat this dish on the stovetop with a dash of broth to bring moisture to the dish or in the microwave if I am in a real pinch. I also enjoy eating it chilled straight from the fridge, so good!
MAKE Gluten + Dairy-free tuna noodle casserole IN UNDER 30 MINUTES
This gluten + dairy-free tuna noodle casserole is pretty quick to whip up. Even quicker if you have your veggies pre-chopped. Other than that you are simply sautéing a couple ingredients in a saucepan, adding some milk, broth, & spices then blending. Adding that mix to your prepared pasta with some tuna & added veggies & voila. So even if you aren’t in the mood to cook or had a long day this won’t take too much time or effort to put together.

MAKE Dairy-free tuna noodle casserole GLUTEN-FREE
I made this gluten + dairy-free tuna noodle casserole gluten-free by using chickpea pasta which was great! I love chickpea pasta for added fibre & protein as well. I also love this brown rice pasta for another gluten-free pasta option. But this recipe will work with any pasta, gluten-free or regular!
If you do want to add the optional topping, opt for gluten-free breadcrumbs to keep it 100% gluten-free. I used these.
MAKE Dairy-free tuna noodle casserole DAIRY-FREE
This recipe is naturally dairy-free as we are pretty much making our own creamy, dairy-free cream of mushroom soup. I did choose to serve this dish with cheese as I can tolerate dairy well. If you want to serve it with dairy-free cheese that is a great option as well! Or you can simply omit the cheese & this casserole will be just as delicious.

Description
This gluten + dairy-free tuna noodle casserole is so easy to make! It is the perfect weeknight dinner to whip up & have the leftovers for a quick & easy lunch the next day! It is dairy-free, gluten-free, & absolutely delicious!
Ingredients
- 2 tbsp avocado or extra-virgin olive oil (or butter or vegan butter)
- 1/2 red onion, roughly chopped
- 4 garlic cloves, minced
- 1 + 1/2 cups mushrooms, diced
- 1 tsp pink salt
- Black pepper, to taste
- 2 tbsp fresh thyme or 2 tsp dried thyme
- 2 tbsp fresh parsley or 2 tsp dried parsley
- 1 tsp onion powder, optional*
- 1 tsp garlic powder, optional*
- 1 tbsp dijon mustard, optional*
- 1 cup milk of choice (I used unsweetened cashew milk)
- 1 cup broth (chicken or vegetable)
- 2 cups broccoli florets, fresh or frozen
- 1 cup peas, frozen
- 2 cans of tuna (170 g per can)
- 1 package of pasta (I used this chickpea pasta for added fibre & protein), prepared as indicated on package
Topping (optional)*
- shredded cheese (dairy-free if needed), I recommend mozzarella or parmesan
- gluten-free breadcrumbs
Instructions
- Over high heat in a large saucepan add the oil to the pan with the onion, garlic, & mushrooms. Saute for 3-5 minutes until the veggies are soft & fragrant.
- Add this mixture to a blender with the broth, milk & spices. Blend until smooth & creamy.
- Place this mixture back on the stovetop on med/high & add the frozen broccoli, peas, & canned tuna allowing the veggies for simmer for 10 minutes.
- Add this mixture to a casserole dish & mix in your prepared pasta of choice.
- Top with cheese (use dairy-free if needed) and gluten-free breadcrumbs, if desired.
- Bake at 400 F for 15 minutes until the top is golden brown (if using the cheese & breadcrumbs)**.
- Serve & enjoy!
Notes
**If you are not using the cheese & breadcrumbs you can simply mix the heated sauce into the prepared pasta & enjoy, as is.
