Gluten-Free Peachy Lemon Pasta Salad
This gluten-free peachy lemon pasta salad was inspired by a recipe I saw on Ambitious Kitchen. It was this one & she added some fresh peach slices to a beautiful pasta salad. It looked absolutely delicious & I loved the fruity twist for a fun summer take on a classic dish.
This recipe packs a ton of flavour along with good for you ingredients. It can be made gluten-free & vegan with a few simple modifications as well. It is sure to be a hit with everyone!
Easy Gluten-Free Peachy Lemon Pasta Salad
This recipe is actually incredibly easy as well. Once you have the pasta prepped & sauced mixed together, it is just a matter of throwing it all into a large bowl & enjoying! Spend a few minutes on the weekend or during the week to mix it all together & then have a healthy cold pasta salad for the next few days! It also makes a great addition to any BBQ or summer party, & is sure to be a hit!

Making this Gluten-Free Peachy Lemon Pasta Salad Vegan
It’s actually incredibly easy to make this recipe vegan. You just have to swap out the feta. You can use your favourite vegan cheese substitute or you can completely omit it & this recipe will still be delicious & full of flavour!
Make it gluten-free
The only thing you need to make sure you have on hand to make this gluten-free is the pasta. I have been loving chickpea pasta lately. It has extra fibre & protein which is a nice added bonus to a pasta dish. I used this one in this recipe & have always had great results from it. I have also been told you can get it for a great price at Costco too, which is something I need to look into for my next trip there.
Make a batch, eat all week!
One of the things I love about this recipe is that it makes a decent amount. And it also gets better with time as all of the ingredients have time to mesh & blend together. For those reasons, its a great recipe to prep at the start of the week & then you have it on hand for easy lunches or snacks all week long!
You can store it in the fridge & simply serve as desired. It should last up to one week but it best within the first 3-4 days!

Ingredients you will need:
Pasta Salad
- 1- 8 oz package of pasta of choice (I used this one & love it for added protein & fibre. Plus it’s gluten-free & delicious)
- red onion, sliced
- cherry tomatoes, diced
- 3 peaches, sliced
- feta, crumbled (omit for vegan or sub your favourite dairy-free cheese)
Dressing
- 1 lemon, juiced
- dijon mustard
- maple syrup (or honey)
- extra virgin olive oil (or avocado oil)
- red wine vinegar
- garlic, minced

Ingredients
Pasta Salad
- 1– 8 oz package of pasta of choice (I used this one & love it for added protein & fibre. Plus it’s gluten-free & delicious)
- 1/2 red onion, sliced
- 1 cup cherry tomatoes, diced
- 3 peaches, sliced
- 1 avocado, diced (optional)
- 1/2 cup feta, crumbled (omit for vegan or sub your favourite dairy-free cheese)
Dressing
- 1 lemon, juiced
- 1 tsp dijon mustard
- 1 tbsp maple syrup (or honey)
- 1/4 cup extra virgin olive oil (or avocado oil)
- 2 tbsp red wine vinegar
- 3 cloves garlic, minced
Instructions
- In a small bowl add the ingredients for the dressing together, mixing well & then set in the fridge while you prepare the rest of the pasta salad.
- Prepare the pasta as indicated on the box, drain & let cool while you prep the other ingredients.
- Slice & dice all of the add-in’s & then mix them with the cooled pasta & drizzle with the dressing.
- Mix well, store in the fridge & serve cold. Enjoy!
