Healthier Rocky Road Cookies

I think we can all agree now that cookies are my bread & butter. There is something so comforting about a warm, chewy, delicious cookie. These healthier rocky road cookies will meet all those needs, but are also gluten, dairy, & grain-free

Healthier Rocky Road Cookies

Ingredients you will need for these healthier rocky road cookies:

These cookies actually require only a few basic ingredients, & if you have made any of my recent cookies you will likely have most of the ingredients already on hand!

  • Almond flour (I get this from Costco, as it is super affordable there, but you can also get it here)
  • Coconut oil (if you don’t like the taste of coconut get this one)
  • Coconut sugar
  • Egg
  • Baking soda
  • Pink salt
  • Vanilla extract
  • Coconut flour
  • Dark chocolate chips (these are my favourite dairy-free ones)
  • Marshmallows (I like these ones)
  • Pretzels (I used these gluten-free ones)
  • Collagen peptides (optional but I find really helps with the chewy texture of the cookies)

Tools you need for these cookies:

  • Mixing bowl
  • Measuring cups & spoons
  • Spatula or mixing spoon
  • Baking tray
  • Parchment paper
  • Oven

A healthier rocky road cookie

One of my passions in life is to show people that healthy food can be delicious. These cookies, I believe, are proof of that. I took these to school & had all my friends sample them for me. They were SO impressed & love that they are also made with better for you ingredients. No dairy or gluten are needed to make these tasty, but healthier, cookies!

Healthier Rocky Road Cookies

Make once, eat later:

I highly recommend making a batch of these healthier rocky road cookies to start the week. I love having some healthier snacks & treats made on the weekend for the busy week ahead. Healthier treats & snacks keep me more satiated & able to feel my best.

You could even double or triple the mixture & then either freeze the dough into pre-rolled balls & bake as desired for a fresh baked cookie in a pinch. Or you could bake them all & freeze some to take out as desired. I recommend the first option as this better preserves the texture of the cookies & the add-ins, in my opinion!

Description

These delicious dairy & gluten-free rocky road cookies are chewy, rich, full of flavour, & incredibly easy to whip up!


Ingredients

Scale
  • 1 cup Almond flour
  • 1/4 cup coconut oil, softened
  • 1/2 cup coconut sugar
  • 1 Egg
  • 1 tsp Baking soda
  • 1/4 tsp Pink salt
  • 1 tsp Vanilla extract
  • 2 tbsp Coconut flour
  • 1/3 cup dark chocolate chips (I like these dairy-free ones)
  • 1/3 cup marshmallows (I used these vegan ones)
  • 1/3 cup pretzels (these are my favourite gluten-free ones)
  • 1/3 cup collagen peptides (optional, but I find really help make these cookies super chewy)

Instructions

  1. Preheat the oven to 350 degrees F & line a baking tray with parchment paper. Set aside.
  2. Mix the softened coconut oil & coconut sugar together in a medium-large bowl.
  3. Add the rest of the ingredients for the cookies to combine & mix until everything is well incorporated (except the marshmallows & pretzels).
  4. Let sit in the fridge for 10-15 minutes.
  5. Roll a spoonful of the batter into a ball.
  6. Place the balls on your prepared baking tray, pressing down slightly. Add a couple marshmallows & 1-2 pretzels on top of the cookies, slightly pushing them into the cookie dough. I like to add a few more chocolate chips to the top of the cookies as well. The dough spreads during baking so the toppings will fall into place when baking.
  7. Bake for 9-12 minutes, remove from the oven & let cool slightly on the pan for at least 10 minutes. This gives a super fudgey & chewy final cookie. If you want a crunchier cookie, bake for 15 minutes.
  8. Enjoy!

Notes

*The collagen peptides are optional & the recipe will work without them, but I did find when I used them, the cookies came out slightly more chewy.
