DAIRY + GLUTEN + REFINED SUGAR-FREE + NO BAKE Healthier Rocky Road Fudge
This healthier rocky road fudge is made without any gluten, dairy or refined sugars. You can sweeten them up a bit with a bit of maple syrup or preferred sweetener of choice if desired, but I found they were naturally sweet enough from the dark chocolate that I used! This fudge is full of delicious texture & flavours from the goji berries, hazelnuts, dark chocolate & more!

Is this Healthier Rocky Road Fudge vegan?
Yes! You just want to make sure you use vegan chocolate & vegan marshmallows, both of which I linked my favourite brands of below in the recipe. You are also going to want to make sure you use coconut oil or vegan butter, rather that regular butter.
Can I make this healthier rocky road fudge keto/low-carb?
Yes! You just have to make sure to have a few key ingredients on hand. You are going to want to use a low-sugar chocolate, which I have also linked my favourite brand of in the full recipe! You are going to want to use low-carb marshmallows as well. I haven’t found a great brand to purchase yet, but I have a recipe on my blog that you can find here for super authentic & low-carb marshmallows!
I also recommend omitting the dried fruit to lower the carbs & sugar as well! If you do choose to use a sweetener I recommend powdered Lakanto, which doesn’t raise blood sugar levels & is a great option for low-sugar & keto baking! As you can see this recipe is very easy to modify to be low-carb, low-sugar & keto!
HOW TO STORE This HEALTHIER rocky road fudge
I store this healthier rocky road fudge in an air-sealed container in the fridge or the freezer. After it has set I move it from the square baking pan & the parchment paper & store it in a bag or glass container, covered in the fridge! You could also store it in the freezer, where it will last longer & remove from the freezer as desired. Note: if you do keep it in the freezer, I recommend taking it out 10-20 minutes before you want to enjoy it, so it can warm up slightly!

- canned coconut milk (the thick creamy part)
- dark chocolate chips (I like these for dairy-free & these for sugar-free)
- butter or coconut oil (you could also sub for your preferred vegan butter of choice, this is my favourite)
- pink salt
- vanilla extract
- Optional sweetener (I didn’t use any as my chocolate gave it enough sweetness)
- marshmallows (I like these for a vegan & gluten-free option, or I like these homemade ones for a lower sugar option)
- mixed nuts (I used dry roasted hazelnuts)
- dried fruit (optional, I used goji berries)
- gluten-free pretzels (optional)

Ingredients
- 1/2 cup canned coconut milk (the thick creamy part)
- 1 cup dark chocolate chips (I like these for dairy-free & these for sugar-free)
- 1/4 cup butter or coconut oil (you could also sub for your preferred vegan butter of choice, this is my favourite)
- 1/4 tsp pink salt
- 1/2 tsp vanilla extract
- Optional sweetener (I didn’t use any as my chocolate gave it enough sweetness)
- 1/2 cup marshmallows (I like these for a vegan & gluten-free option, or I like these homemade ones for a lower sugar option)
- 1/2 cup mixed nuts (I used dry roasted hazelnuts)
- 1/4 cup dried fruit (optional, I used goji berries)
- 1/4 cup gluten-free pretzels (optional)
Instructions
- In a medium sized pot over low heat melt the chocolate with the coconut cream & the butter or coconut oil until smooth.
- Remove from heat & mix in your add-in’s.
- In a parchment paper lined square baking tray pour your mixture into the pan & top with a few extra toppings if desired (chocolate chips, goji berries, hazelnuts etc.)
- Place in the fridge overnight or for at least 8-12 hours to firm up.
- Once fully hardened, cut into squares & store in an air-sealed container in the fridge, enjoy!
