Healthy Banana Bread Granola Bars

These healthy banana bread granola bars are full of hearty oats, banana, cinnamon, & chocolate chips. They are sweetened with only a bit of maple syrup & the banana. They are the perfect snack to fill you up & fuel your day!

DAIRY-FREE & GLUTEN-FREE Healthy Banana Bread Granola Bars

These healthy banana bread granola bars are 100% dairy-free by using coconut oil in these bars. You also will want to make sure to use dairy-free dark chocolate to keep them 100% dairy-free. This is my favourite for dairy-free baking.

This recipe is also 100% gluten-free as long as you use certified gluten-free rolled oats. I used these in this recipe. If you are not gluten-free you can use any rolled oats in this recipe.

CAN I MAKE THESE Healthy Banana Bread Granola Bars LOWER IN SUGAR?

As I am sure you know by now, Lakanto is my go-to for lower sugar baking. I even made an eCookbook including it as my main sweetener of choice for most of the recipes! So if I was going to swap out the maple syrup in these granola bars for something that won’t spike blood sugar as much I would use their maple syrup or this one.

I would also recommend using a lower sugar dark chocolate & I love these for lower sugar baking that requires chocolate or chocolate chips!

HOW TO STORE Healthy Banana Bread Granola Bars

I store them in an air-sealed container in the fridge or the freezer. If you store them in the freezer, they will last longer & simply remove one from the freezer as desired. Note: if you do keep them in the freezer, I recommend taking them out & re-heating them in the microwave or oven before you want to enjoy them!

CAN I FREEZE THESE GRANOLA BARS?

Like I mentioned above you definitely can! Just take them out & re-heat them in the microwave or the oven until warm & enjoy!

Can I make these healthy banana bread granola bars vegan?

I haven’t tried making these vegan yet myself so I can’t say for sure how they will turn out but I do have a few recommendations you can try! I would first swap out the egg with a flax egg (2 tbsp ground flax seed + 3 tbsp water & let it sit for 10 minutes to thicken up). You also want to make sure you’re using vegan chocolate chips, I like these ones.

And last you will want to swap out the collagen peptides for your favourite vegan protein powder. I like collagen in baking because it dissolves well & is flavourless so doesn’t affect the final product. So keep this in mind when using a protein powder they ca vary greatly in taste & texture. I also find most don’t dissolve as well as collagen in baking so you might need to use slightly less protein powder.

Ingredients you will need:

  • 1 ripe banana (1/2 cup, mashed)
  • vanilla extract
  • pink salt
  • cinnamon
  • coconut oil, melted
  • maple syrup (you could also try this one for a lower sugar option)
  • gluten-free rolled oats
  • collagen peptides
  • superfine almond flour
  • egg
  • baking soda
  • chocolate chips (I like these for dairy-free & these for sugar-free)

Description

These healthy banana bread granola bars are full of hearty oats, banana, cinnamon, & chocolate chips. They are sweetened with only a bit of maple syrup & the banana. They are the perfect snack to fill you up & fuel your day!


Ingredients

Scale
  • 1 ripe banana (1/2 cup, mashed)
  • 1 tsp vanilla extract
  • 1/4 tsp pink salt
  • 1 tsp cinnamon
  • 2 tbsp coconut oil, melted
  • 3 tbsp maple syrup (you could also try this one for a lower sugar option)
  • 2 cup gluten-free rolled oats
  • 1/4 cup collagen peptides
  • 3/4 cup superfine almond flour (**see notes for nut-free option)
  • 1 egg
  • 1 tsp baking soda
  • 1/2 cup chocolate chips (I like these for dairy-free & these for sugar-free)

Instructions

  1. Pre-heat the oven to 350 F & line a square baking pan with parchment paper.
  2. In a large mixing bowl add the mashed banana with all of the other ingredients until well combined.
  3. Spread evenly in a square baking pan & bake for 25-30 minutes.
  4. Remove from the oven & let cool.
  5. Once cooled, slice into bars or squares & enjoy! 

Notes

*You could try subbing your favourite protein powder for the collagen peptides in this recipe but every protein powder can vary significantly when baked. You may need to add a bit less protein powder to achieve the right consistency & texture when baked.

**Sub 1/2 cup gluten-free flour or regular flour in place of the almond flour for a nut-free option

    I don’t know if I glad I made a double batch or embarrassed that it’s almost gone… my kids/Bf LOVE this! (Myself included) Probably the easiest and tastiest recipe I’ve made from Laushealthylifestyle. I know to always make a double batch as they don’t last long in this house!

    This is one of the best recipes I have ever found for a healthier version of granola bars. My husband is a tough critic, and he kept eating them and saying “whats in their again? They’re really good”. Haha. My 5 and one year old love them as well. These are on steady rotation at our house!!

    These were super easy to make (like literally 10 mins in prep), I love that you just add everything to a bowl and mix!

    I didn’t make them as healthy because i just used regular flour, and didn’t have the collagen peptides but they’re still tasty! Will definitely be making them again! 🙂
