Refined Sugar + Grain+ Dairy-Free
I wanted to add a healthier twist to these cookies so I used coconut sugar as the sweetener of choice. You can easily sub Lakanto in this recipe to make it lower sugar as well. To make this recipe grain-free I used almond flour & coconut flour as the flour in this recipe. We are also keeping this dairy-free by using coconut oil, but feel free to use butter or ghee as well, which should also work!
Quick + Easy
These cookies require minimal prep & only a few basic ingredients. The toughest thing about them is chilling them in the fridge before baking (it’s the toughest because it’s hard to wait)!

Description
These healthier birthday cake cookies are delicious no matter the occasion! They only require 10 ingredients & can be whipped up in under 20 minutes! Made with grain-free, dairy-free & refined sugar-free ingredients!
Ingredients
- 1 cup Almond flour
- 1/4 cup Coconut oil, softened (or butter/ghee)
- 1/2 cup Coconut sugar (use Lakanto for a lower sugar option)
- 1 Egg
- 1 tsp Baking soda
- 1/4 tsp Pink salt
- 1 tsp Almond extract
- 2 tbsp Coconut flour
- 1/3 cup collagen peptides, optional*
- 1/4 cup White chocolate chips (use dairy-free if desired)
- Sprinkles, to top off if desired*
Instructions

Preheat the oven to 350 degrees F & line a baking tray with parchment paper. Set aside.

With an electric beater or stand mixer (or by hand using a spatula) beat the coconut oil & coconut sugar together.

Add the rest of the ingredients for the cookies to combine & mix until everything is well incorporated.

Let sit in the fridge for 10-15 minutes.

Roll a spoonful of the batter into a ball.

Place the balls on your prepared baking tray, pressing down slightly. I like to add a couple chocolate chips to the top & then a few sprinkles to each cookie before baking.

Bake for 9-12 minutes, remove from the oven & let cool slightly on the pan for at least 10 minutes. This gives a super fudgey final cookie. If you want a crunchier cookie, bake for 15 minutes.

*To keep this recipe dairy-free, make sure to use dairy-free white chocolate or dark chocolate chips.

All of Lauren’s cookie recipes turn out soooo well considering they are using almond flour, which often times can be an issue. She has it figured out what ingredient combinations work together so that they end up perfect!
