Description

These healthy no bake pumpkin oat bars with white chocolate are gluten-free & vegan. They are made with wholesome ingredients like pumpkin puree, maple syrup, pumpkin pie spice & rolled oats!

Healthy No Bake Pumpkin Oat Bars

  • 1/4 cup pumpkin puree
  • 1/2 cup nut or seed butter of choice (I used all natural peanut butter)
  • 2 tbsp coconut oil, melted
  • 1 tsp pumpkin spice
  • 1 tsp cinnamon
  • 1/4 tsp pink salt
  • 1 tsp vanilla extract
  • 2 tbsp coconut sugar
  • 1 tbsp honey or maple syrup
  • 1 cup rolled oats (make sure they are certified gluten-free to keep this recipe gluten-free if needed)

White Chocolate Topping

  • 1/3 cup white chocolate chips (I like these for lower sugar or you can just use regular. For vegan use a vegan white chocolate or sub with regular vegan chocolate chips of choice)
  • 1 tsp coconut oil

Instructions

Healthy No Bake Pumpkin Oat Bars

  1. In a mixing bowl add all of the ingredients for the oat bars, & mix together until well combined.
  2. Line a pan with parchment paper, I used a loaf pan for thicker bars but you can also use a square baking pan for thinner bars.
  3. Evenly spread the mixture into the pan, pressing firmly.
  4. Place the pan in the freezer while you make the topping.

White Chocolate Topping

  1. In a small microwave friendly safe bowl or small pot over low heat, melt the white chocolate & coconut oil. In the microwave this took me 30 seconds.
  2. Remove the bars from the freezer & evenly cover the top of them in the white chocolate.
  3. Place the bars back in the freezer for about an hour or until they have firmed up.
  4. Remove from the pan & slice into bars, enjoy!*

Notes

*These bars can be stored in the fridge or freezer.
