How Can I Make These Healthy Peanut Butter Balls Lower in Sugar
You are simply going to want to use powdered Lakanto as the powdered sugar of choice. You can alternatively also use 1/4 cup powdered Lakanto & 1/4 cup regular powdered sugar to significantly decrease the amount of sugar per serving.
I also love coconut sugar. To make powdered coconut sugar, simply blend coconut sugar in a blender until it resembles a powder. Note that using powdered coconut sugar in this recipe will make the peanut butter filling slightly darker & have a more ‘caramel’ flavour compared to regular powdered sugar.
For a low sugar chocolate option I love this one. It is so creamy & delicious, it is my go-to for low sugar baking.

These balls store great in the fridge for up to 5-7 days. They also freeze wonderfully & can be taken out a few hours before you wish to enjoy one to allow it time to thaw.

Peanut Butter Filling
- all natural peanut butter, runny*
- maple syrup
- coconut oil
- powdered sweetener of choice (regular, powdered Lakanto, 1/2 of both or powdered coconut sugar (simply blend coconut sugar until a powder forms in the blender))
- vanilla extract
- pink salt
- brown rice crisp cereal

Ingredients
Peanut Butter Filling
- 1/2 cup all natural peanut butter, runny*
- 2 tbsp maple syrup
- 2 tbsp coconut oil, melted
- 1/2 cups powdered sweetener of choice (regular, powdered Lakanto, 1/2 of both or powdered coconut sugar (simply blend coconut sugar until a powder forms in the blender))
- 1/2 tsp vanilla extract
- A pinch of pink salt
- 1/2 cup brown rice crisp cereal
Chocolate Coating
Instructions
- Mix all of the ingredients for the filling together until smooth.
- Roll into balls (about 2-3 tbsp per ball) & chill then in the fridge while you make the coating.
- Melt the chocolate & the coconut oil for 30 second intervals in the microwave, mixing after each interval, until smooth. Or heat over low on the stovetop until the chocolate & coconut oil have melted.
- Dip the chilled peanut butter balls into the chocolate mixture to coat each one & drizzle a bit of chocolate over the coated balls if desired.*
- Chill them for about 30-60 minutes until the chocolate has hardened.
- Store in the fridge & enjoy!
