Healthy Peanut Butter Balls

These healthy peanut butter balls are incredibly easy to whip up & made with ingredients you probably already have on hand! Perfectly rich, full of peanut butter flavour, with a slight crunch on the inside & coated in a delicious, creamy chocolate on the outside! These are gluten-free, vegan, dairy-free & can be made low in sugar!

There’s a few reasons why these are the best healthy peanut butter balls:

How Can I Make These Healthy Peanut Butter Balls Lower in Sugar

You are simply going to want to use powdered Lakanto as the powdered sugar of choice. You can alternatively also use 1/4 cup powdered Lakanto & 1/4 cup regular powdered sugar to significantly decrease the amount of sugar per serving.

I also love coconut sugar. To make powdered coconut sugar, simply blend coconut sugar in a blender until it resembles a powder. Note that using powdered coconut sugar in this recipe will make the peanut butter filling slightly darker & have a more ‘caramel’ flavour compared to regular powdered sugar.

For a low sugar chocolate option I love this one. It is so creamy & delicious, it is my go-to for low sugar baking.

How Can I Make These Healthy Peanut Butter Balls Dairy-Free/Vegan

To make these healthy peanut butter balls dairy-free/vegan you are just going to want to make sure to use a dairy-free/vegan chocolate. I like these chocolate chips for a dairy-free/vegan option when baking.

How To Store These Healthy Peanut Butter Balls

These balls store great in the fridge for up to 5-7 days. They also freeze wonderfully & can be taken out a few hours before you wish to enjoy one to allow it time to thaw.

Ingredients you will need for healthy peanut butter balls

Peanut Butter Filling

  • all natural peanut butter, runny*
  • maple syrup
  • coconut oil
  • powdered sweetener of choice (regular, powdered Lakanto, 1/2 of both or powdered coconut sugar (simply blend coconut sugar until a powder forms in the blender))
  • vanilla extract
  • pink salt
  • brown rice crisp cereal

Chocolate Coating

  • chocolate chips (I like these for dairy-free & these for sugar-free)
  • coconut oil

Description

These healthy peanut butter balls are incredibly easy to whip up & made with ingredients you probably already have on hand! Perfectly rich, full of peanut butter flavour, with a slight crunch on the inside & coated in a delicious, creamy chocolate on the outside! These are gluten-free, vegan, dairy-free & can be made low in sugar!


Ingredients

Scale

Peanut Butter Filling

  • 1/2 cup all natural peanut butter, runny*
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil, melted
  • 1/2 cups powdered sweetener of choice (regular, powdered Lakanto, 1/2 of both or powdered coconut sugar (simply blend coconut sugar until a powder forms in the blender))
  • 1/2 tsp vanilla extract
  • A pinch of pink salt
  • 1/2 cup brown rice crisp cereal

Chocolate Coating

  • 1 cup chocolate chips (I like these for dairy-free & these for sugar-free)
  • 1 tbsp coconut oil

Instructions

  1. Mix all of the ingredients for the filling together until smooth.
  2. Roll into balls (about 2-3 tbsp per ball) & chill then in the fridge while you make the coating.
  3. Melt the chocolate & the coconut oil for 30 second intervals in the microwave, mixing after each interval, until smooth. Or heat over low on the stovetop until the chocolate & coconut oil have melted.
  4. Dip the chilled peanut butter balls into the chocolate mixture to coat each one & drizzle a bit of chocolate over the coated balls if desired.*
  5. Chill them for about 30-60 minutes until the chocolate has hardened.
  6. Store in the fridge & enjoy!

*I like to do this using two spoons to prevent my fingers from getting covered in chocolate. See here for a video tutorial.
