Homemade pumpkin spice cereal that is paleo & vegan? Yes, & it is actually super easy, the hardest part is rolling the dough into little balls! This cereal has the perfect amount of slightly naturally sweetened pumpkin spice flavour in every crunchy bite!

This homemade pumpkin spice cereal is going to be your new favourite thing to whip up! It is so easy & like I said the hardest part of it all is rolling the dough into balls! Which I won’t lie can seem tedious, but just put on a podcast or your favourite TV show (Hello Real Housewives) & enjoy the time to yourself!

After that you bake the little balls until they are nice & crunchy, let them cool & you are good to go! That is it! Homemade cereal start to finish in under 45 minutes.

Vegan Pumpkin Spice Cereal

There are no eggs or butter in this recipe & I use avocado oil to help bind it all together & give it some texture. I am also using pumpkin puree instead of eggs to help bind this cereal together & give it some texture & structure. Plus we have some added fibre & nutrients from the pumpkin to amp up the nutritional value of this recipe, compared to store-bought competition!

Grain-Free & Paleo Pumpkin Spice Cereal

Not only is this recipe vegan but I also used all grain-free & paleo friendly flours in this cereal, making it perfect for those who follow a grain or gluten-free, paleo diet!

How much cereal does this make

Depending on how hungry you are & how big you make your cereal balls this can make 1-3 servings. I got 2 servings out of this batch so it did not last long in my house-hold. You can definitely double or triple the recipe to make a larger amount. However, since mine didn’t last more than a day I am not 100% sure how storing it up to a week will affect the overall texture & crunch factor.

How does this cereal store?

Like I mentioned above, when I made this it didn’t last longer than a day so I am not sure how storing it will affect the result of the cereal. I would recommend if you want to store it, to keep it in an air-sealed container for up to a week. If you do make a larger batch or have some leftover from this one & plan to store it, please update me so I can make a note about it! I plan to make a larger batch soon & store that one so again, I will update this blog post as soon as I determine the best way to store this cereal!

  • maple syrup
  • pumpkin spice

  • avocado oil (melted coconut oil should also work here as well)
  • almond flour
  • coconut flour

Homemade pumpkin spice cereal that is paleo & vegan? Yes, & it is actually super easy, the hardest part is rolling the dough into little balls! This cereal has the perfect amount of slightly naturally sweetened pumpkin spice flavour in every crunchy bite!


Ingredients

Scale
  • 2 tbsp of pumpkin purée 
  • 2 tbsp maple syrup
  • 1/2 tsp pumpkin spice
  • 1/2 tsp vanilla
  • 1/4 tsp baking soda
  • 1 tbsp avocado oil (melted coconut oil should also work here as well)
  • 1/2 cup almond flour
  • 2 tbsp coconut flour

Instructions

  1. Pre-heat the oven to 325 F & line a large baking tray with parchment paper.
  2. In a bowl mix all the ingredients together well.
  3. Let the dough sit for 5-10 minutes.
  4. Roll the dough into little balls (I used about 1/2 tsp for each one) & place on a parchment paper lined baking tray. *
  5. I recommend putting on a good show or podcast while you roll because it can be a bit tedious (but worth it)!
  6. Once they are all rolled you’re going to bake them for 25-35 minutes, spread out evenly & not touching each other. Baking times will slightly vary depending on your oven & the size of your cereal balls. Mine took around 30.
  7. After baking for 15 minutes you are going to roll the balls around every 5-7 minutes to ensure even cooking.
  8. Once cooked you want to let them cool completely on the pan as this will ensure they get extra crunchy.
  9. Serve with your milk of choice (I used cashew milk) & enjoy!**

Notes

*I recommend trying to keep them all the same size & relatively small. As you will need a longer baking time for the larger balls or they won’t get as crunchy.

**This recipe makes 1-3 servings depending on the size of your balls & how hungry you are. You can definitely double the recipe & store them in a mason jar for up to a week. However, since they didn’t last more than a day in my home I cannot say how this will affect the texture over time & in my experience have been best when eaten the same day. Let me know if you do store them & how it worked out for you!
