No Bake Chocolate Peanut Butter Bars

These no bake chocolate peanut butter bars are gluten, dairy, refined sugar-free & vegan! They taste like a creamy, rich flavourful, healthier peanut butter cup!

No Bake Chocolate Peanut Butter Bars

6-Ingredient No Bake Chocolate Peanut Butter Bars

These bars are incredibly easy to throw together & only require 5 ingredients! I love having one as dessert or a treat throughout the day.

I also threw on a couple Easter coloured M&Ms for a fun little twist for the spring!

Dairy + Gluten + Refined Sugar-Free + Vegan No Bake Chocolate Peanut butter Bars

These bars are made without any gluten, dairy or refined sugars. I sweetened them up a bit with a bit of maple syrup & some dark chocolate. They are the perfect combination of salty & sweet with the pink salt & all-natural peanut butter as well!

How to store these bars

I like to cut them into bars & then store them in the freezer in an air-sealed container. I will take them out about 5-10 minutes before enjoying one to let them warm up & soften slightly. You can also store them the same way in the fridge as well!

Ingredients you will need:

Peanut Butter Bars

  • All-natural peanut butter (I used crunchy for some extra texture but you can also use smooth)
  • Maple syrup
  • Pink salt
  • Vanilla extract
  • Plain protein powder (I used this Keto Collagen), you can also use a flavoured protein powder but this will alter the taste. Note: for a vegan option use a vegan protein powder.

Chocolate Topping

  • All-natural peanut butter
  • Dark chocolate chocolate chips (I like these for a dairy-free option)
  • M&M’s, optional (I added some Easter coloured ones on top for fun), omit for vegan/dairy-free option or opt for a dairy-free alternative

How to make these no-bake bars

It’s simply a matter of mixing the bar ingredients together & drizzling them in the chocolate topping. After that we have the hardest part… waiting for them to firm up in the fridge or freezer! I like to pop them in the freezer, over the fridge, solely because it makes them ready to go more quickly. I found they took about 30-60 minutes to be ready.

Ingredients

Peanut Butter Bars

  • 1 cup all-natural peanut butter (I used crunchy for some extra texture but you can also use smooth)
  • 1/4 cup maple syrup
  • Pinch of pink salt
  • 1/2 tsp vanilla extract
  • 1/2 cup plain protein powder (I used this Keto Collagen), you can also use a flavoured protein powder but this will alter the taste. Note: for a vegan option use a vegan protein powder.

Chocolate Topping

  • 1 tbsp all-natural peanut butter
  • 1/4 cup dark chocolate chocolate chips (I like these for a dairy-free option)
  • M&M’s, optional (I added some Easter coloured ones on top for fun), omit for vegan/dairy-free option or opt for a dairy-free alternative

Instructions

Peanut Butter Bars

  1. In a mixing bowl add your peanut butter & maple syrup together. 
  2. Add the rest of the ingredients to form a dough consistency.
  3. In a parchment paper lined dish, firmly press the dough into the dish.*
  4. Set in the fridge or freezer while you make the topping.

Chocolate Topping

  1. In a small bowl add the chocolate chips & peanut butter & melt together. You can melt it in the microwave (30 second intervals, mixing after each interval until smooth) or over low heat on the stovetop for a couple minutes.
  2. Once melted drizzle or spread evenly onto the chilled peanut butter bars & place them back in the fridge or freezer to firm up (about 30-60 minutes).
  3. Once firm, slice into bars or squares & store in the fridge or freezer** & enjoy!

Notes

*I used a small rectangular glass dish. The smaller the dish, the thicker your bars will be. The bigger the dish, the thicker your bars will be.

**If you store them in the freezer I recommend taking them out 5-10 minutes before wanting to enjoy one to allow them to soften slightly.
