This paleo pumpkin bread recipe will change your life— it is delicious, sugar/grain/dairy free & pretty easy to whip up too!

Pumpkin Loaf
What you need:
- 1/2 cup pumpkin purée
- 2 eggs
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp pumpkin spice
- 1/4 tsp pink salt
- Dash of nutmeg
- 1 tsp baking powder
- 1 tsp psyllium husk powder (or 1 tbs ground chia or flax)
- 1 tsp turmeric
- Pinch of black pepper
- 1/3 cup almond butter
- 3/4 cup superfine almond flour
- 3 tbs avo oil (or melted oil of
choice such as butter, coconut oil or ghee) - 2/3 cup sweetener of choice (I used golden Lakanto)
- 1/3 cup nut milk (I used unsweetened vanilla almond milk)
- 1 tbs organic molasses *optional
What to do:
Preheat oven to 350 F. Throw all the ingredients into a bowl & mix until well combined. I used a silicon baking mould & generously greased with avocado oil. Bake for 35-40 mins. When a toothpick comes out clean & the top slightly bounces back when touched you should know it’s ready! Let cool before removing from the moulds.
You can also make these into muffins or try baking it into a large loaf (note: baking time may be more or less if using these alternative methods)
Vegan “Cream Cheese” Icing
What you need:
- 1 cup cashews (soak in just boiled water for about 30 mins)
- 3
tbsp avocado oil - 6 tbs nut milk of choice
- 1 1/2 tsp vanilla
- Pinch of pink salt
- 1/2 cup powdered Lakanto
What to do:
Blend all ingredients in a high-speed blender, scraping the sides as needed until you get a smooth, icing consistency. This took me about 7-10 mins of blending/scraping to form a super smooth icing. Spread on top of your mini loaves with some pumpkin seeds & pecans, then enjoy!
