Fall is in the air & I am so happy about it! I absolutely love summer but there is something about the fall that just fires me up & gets me so excited!

I have already noticed the temperature starting to drop & it is making me want to snuggle on the couch with a good book, a warm sweater, & candle burning!
But we cannot forget about all the amazing fall treats (much needed when perched up & cozy on the couch with a good book) so I have got you covered. I have been recipe testing SO many yummy fall recipes & cannot wait to get them all up on the blog for you!
These little mini apple pies are not only cute & delicious but actually super easy to whip up & require a few ingredients! I am not going to waste any more time so let’s get into the recipe!

Mini pies

- 1 cup Almond flour
- 1/4 cup Coconut Flour
- 1/4 cup cold butter or solid coconut oil for a dairy-free option
- 1 Egg
- 1/2 tsp Vanilla extract
- 1 apple, diced
- 2 tbsp Maple Syrup or Golden Lakanto for a lower carb option
- 1 tbsp Flax meal (ground flaxseeds)
- 1 tbsp lemon juice
- 1/8 tsp nutmeg
- 1/8 tsp allspice
- 1 + 1/2 tsp Cinnamon
- 1/2 tsp Vanilla extract
- 1 Egg

- Preheat the oven to 350 degrees F. Line a muffin pan & set aside.
- In a mixing bowl add the cold butter (or coconut oil) diced into chunks with the almond & coconut flour. Mix with your fingers until a crumble is formed & everything incorporated.
- Add the egg & the vanilla & form into a dough.
- Depending on how much you want for the top of the pies your servings will vary. I did a few top-less, a few with full tops & a few with just few lines of crust & got 7 servings.
- Line your muffins pans with some of the pie crust, making sure to bring it up to the sides. Be sure to save some for the top if you desire.
- Bake for 5 minutes, remove from the oven & let cool slightly.
- In a mixing bowl add all of the ingredients together so they are well coated.
- Top into the baked pie crust & add the leftover crust to the top, if using. I rolled out some of the dough & sliced it into lines to pop on top of some.
- Bake for 5-7 minutes & remove for the egg wash. Beat the egg with a fork & carefully brush it over the pies. Place them back in the oven for another 10-15 minutes, until the apples are soft when pierced with a toothpick or fork. Remove from the oven, let cool slightly, then remove from the liner & serve warm with vanilla ice cream & maybe some sugar-free caramel sauce (linked above), enjoy!
