Paleo + Whole 30 Approved Chicken Tenders [Low-Carb & Dairy-Free]

Eating healthy is easy with these on the menu!

Whether you’re following a low-carb, paleo or Whole 30 diet, these will be a hit with everyone in the family! They are full of flavour, easy to make, & only require a few ingredients.

So resolutions for the new year are surrounding weight-loss, but why not make your resolutions more focused on how you want to feel & live your life. Instead of saying “I want to lose 20 lbs,” switch your resolutions to something that focuses on an action that will get you there instead. Think along the lines of “I want to make a new healthy recipe each week for my family,” or “I want to focus on real food as much as possible to fuel my body & feel my best.”

These resolution examples are more, attainable, less-restrictive & focus on how you want to feel, rather than a certain look you want to achieve. How does this relate to chicken tenders you may be wondering? Well these are not deep fried & will make you feel good, but also taste good at the same time. Learn to love the journey & enjoy the process, because one of the best parts of reaching goals is the “getting there.”

Note: you can bake these in the oven or an air fryer! I find they become extra crispy when prepped in the air fryer, if you have one! See recipe notes for air fryer variation.

Paleo + Whole 30 Approved Chicken Tenders [Low-Carb & Dairy-Free]
These paleo, Whole-30 approved, dairy-free, baked chicken tenders need to be added to your dinner table! I love prepping them on the weekend to have for the busy week days. I add them to veggie or lettuce wraps with homemade caesar dressing, salads, or have them with homemade/sugar-free ketchup & sweet potato fries! Get creative & have fun with them!

Ingredients
  • 1 cup Almond flour
  • 1 tbsp Psyllium husk powder You can sub coconut flour, ground flax, or more almond flour
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Paprika
  • 1/4 tsp Pink or Celtic Sea Salt
  • Black pepper To taste
  • 4-6 Chicken breasts Boneless & skinless

  • 1 cup Almond flour
  • 1 tbsp Psyllium husk powder You can sub coconut flour, ground flax, or more almond flour
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1/2 tsp Paprika
  • 1/4 tsp Pink or Celtic Sea Salt
  • Black pepper To taste
  • 4-6 Chicken breasts Boneless & skinless

Instructions
  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper & set aside.
  2. Mix the almond flour, spices, psyllium husk powder (or substitute), pink salt & pepper together in a shallow dish & set aside.
  3. Cut the chicken breasts into chicken strips (or nuggets/"popcorn chicken").
  4. Coat the chicken in the almond flour spice mixture & place on the baking tray. Note: depending on the size of your chicken breasts you may need more of the almond flour spice mixture. Simply half the almond flour & spices & add to the bowl to finish coating the rest of the chicken
  5. Finish coating & evenly spreading the chicken strips onto the baking sheet (if they don't all fit on one sheet use another one also lined with parchment paper so they can be spread evenly).
  6. Place in the oven & bake until the chicken is thoroughly cooked (no pink left) & the coating has browned up & looks crispy. About 20-30 minutes (baking times will vary depending on size of the strips & your oven).
  7. Remove from oven, let cool & serve to your liking! Store in an air-tight container in the fridge.
Recipe Notes

*To make in the air fryer, simply set it to 400 for about 20 minutes. I flip them halfway. Check them regularly as baking times can vary depending on you specific air fryer.

    The flour sticks without egg white ??

      Yes! I have made these multiple times & have never had an issue with the flour not sticking. If it didn’t coat properly for you, simply cover the chicken in a little avocado oil & it should stick without any issues then!

    What do we do with the husk or coconut flour? Mix with almond flour and spices?

      Yes, exactly! Add it in with the other dry ingredients & then coat over the chicken!

          Keep me posted how they work out for you! Note that if the mix isn’t sticking to the chicken coat the chicken in a tiny bit of avocado or olive oil & then add the flour mixture- this should combat that issue if it comes up!

            Didn’t turn out as crispy as I would like, but definitely worth trying again until I get it right. My daughter is allergic to eggs, and she liked them!

            Depending on your oven you may have to bake them a bit longer. You could also broil them for a couple minutes at the end to crisp them up a bit more. If you have an air fryer, I find that is the best method to making them perfectly crispy. So glad your daughter liked them!
