Creamy, low-sugar, dairy-free, & easy to make steel cut oats!

Some people have a hard time digesting oats. If this is you I have a trick that could help you- soaking them!
Soaking your oats overnight BEFORE cooking them helps break down the starches & phytic acid so your body has less work to do when it comes time to eat them. This is often overlooked but definitely makes a huge difference for me. It also makes them super fluffy, soft, & more full, so you get a bit more volume out of them, filling you up for longer.
How to soak your oats:
- Add your oats to a bowl & cover them with water.
- Let them sit, preferably overnight.
- In the morning, drain the water & rinse the oats well using a fine mesh sieve.
- Then the oats are ready to be added to the slow cooker with new, fresh water!

I also love adding a serving of collagen to my prepared oats but simply omit this for a vegan option. I prefer to add my sweetener & additional add-in’s after the oats have been prepared. I kept this recipe pretty basic so you can spice it up however you prefer. It is delicious with maple syrup, coconut butter, cinnamon, almond butter, or I topped it with my easy flax jam recipe which I shared on my Instagram & you can find here! You could make it with a mix of strawberries & rhubarb as well!

- 3/4 cup Steel Cut Oats Pre-soaked (see directions above)
- 3 1/2 cups Milk of choice or water For a creamier option, use milk. I used unsweetened almond milk.
- 1 cup Fresh rhubarb, diced
- 1 cup Fresh strawberries, diced
- 1 tsp Almond extract
- Pinch of Pink or Celtic Sea Salt

- Soak steel cut oats (see above for step by step).
- Add the oats & the fresh filtered water or milk of choice, along with the other ingredients to the slow cooker & stir well.
- Set slow cooker to the 'keep warm' setting & leave overnight. I made these around 8pm & they were ready by 8am. If you are making them later in the evening & want them ready earlier in the morning, cook them on the 'low' setting instead.
- Scoop into a bowl & mix in your collagen peptides (linked above) if using, until it has fully dissolved. Top with whatever your heart desires & add your preferred sweetener of choice (maple syrup, monk fruit, stevia, honey, etc.). I topped this with melted coconut butter, my flax strawberry jam (linked above), & some pecans/sliced almonds. Enjoy!
