Sugar-Free Keto Lime Cheesecake [Gluten-Free]

I am such a sucker for anything lime or lemon, especially in the summer months! There is just something so refreshing about the tangy flavour of the citrus fruits!

This recipe was such a hit with everyone I gave it to & I cannot wait to share it for you all to try! This recipe isn’t dairy-free but I do have a dairy-free lemon meringue bar recipe in my eCookbook that can easily be made with lime instead of lemon!

This recipe is gluten-free, sugar-free as I sweetened it with Lakanto (monk fruit + erythritol), & keto-friendly! It is the perfect addition to any summer cookout & makes for a delicious dessert any time of the year! For the crust: I used the crust recipe that is in my eCookbook for my lemon meringue bars. It is my favourite grain, gluten, sugar & dairy-free base for so many recipes. It is delicious & works really well in this recipe! You can find the recipe on page 25 of my eCookbook, & you can purchase a copy here!

Lime Cheesecake
  • 2 packages (8 oz) Cream cheese, softened
  • 2 Limes, large
  • 1 tsp Vanilla extract
  • 1/3 cup Whipping cream
  • 1/3 cup Powdered Lakanto Sweetener
  • 3 Eggs

Instructions
Gluten & Dairy Free Keto Crust
  1. Prepare the crust as per the instructions on page 25 of my eCookbook (link above to purchase a copy)!
Lime Cheesecake
  1. Preheat the oven to 350 degrees F & grease a glass pie dish well with your oil of choice (I used grass-fed butter). You can also line it with parchment paper if you prefer.
  2. In a powerful blender (I used a Vitamix) add all of the ingredients for the lime cheesecake & blend for 30-60 seconds until smooth.
  3. Add the eggs & gently pulse for 15 seconds to combine.
  4. Pour the lime cheesecake mixture over the prepared crust & bake for 35-45 minutes. Note that baking times may vary depending on your pan & unique oven. Keep an eye on it & when it is no longer 'jiggly' & slightly browned on top it is done.
  5. Remove from the oven, let cool & then place in the fridge for a few hours or ideally overnight. Cut into slices.
  6. I topped each slice with my sugar-free whip cream (recipe is on page 31 of my eCookbook), a fresh lime slice, & a bit of grated lime rind. Store in the fridge & enjoy!
