I am such a sucker for anything lime or lemon, especially in the summer months! There is just something so refreshing about the tangy flavour of the citrus fruits!
This recipe was such a hit with everyone I gave it to & I cannot wait to share it for you all to try! This recipe isn’t dairy-free but I do have a dairy-free lemon meringue bar recipe in my eCookbook that can easily be made with lime instead of lemon!
This recipe is gluten-free, sugar-free as I sweetened it with Lakanto (monk fruit + erythritol), & keto-friendly! For the crust: I used the crust recipe that is in my eCookbook for my lemon meringue bars. It is my favourite grain, gluten, sugar & dairy-free base for so many recipes.
