
PALEO + WHOLE-30 + GRAIN-FREE + DAIRY-FREE CROCKPOT SWEET POTATO STEW
You may have noticed a lot of my recipes are inspired by my moms cooking & my favourite dishes from when I was a kid. These meals bring me so much joy & truly take me back. It’s called comfort food for a reason & a good stew, like this cranberry apple parsnip sweet potato beef stew, is one of those things!

My mom made stew all the time for us growing up & it’s something I have grown to love more & more. I wanted to add a little festive twist to this one. But also keep things pretty easy & not too difficult to throw together on busy nights!

I love crockpot meals because they are not only convenient but also delicious & super versatile. I haven’t tried subbing any of the ingredients in this recipe but you could definitely try subbing out the beef for a couple cans of chickpeas (drained & rinsed well) or even quinoa, & using vegetable broth for a vegan/vegetarian option! Anyways, I won’t keep chatting & rather get into this recipe! PS: trust me with the apple & cranberry. I know it’s different but I really liked the twist it gave this sweet potato beef stew! I hope you do too!

PS: do you guys top your stew with mustard or is that just a thing in my family?! I asked this question on my Instagram story & had mixed reviews! Let me know in the comments! I find it hard to have stew any other way, it’s what I grew up doing!

- 1 kg stewing beef browned
- 1 apple diced
- 1 red onion chopped
- 1 bag of parsnips 454 g, about 7-8
- 1 medium sweet potato diced
- 2 cups chicken broth
- 1 tsp Pink salt
- Black pepper
- 1 tbsp dried thyme
- 2 tbsp coconut aminos or tamari
- 4 tsp garlic cloves minced or 1dried garlic
- 1 cup Water
- 2 tbsp arrowroot powder
- 1 heaping cup of cranberries

- In a saucepan over medium, heat brown the stewing beef evenly.
- Add the rest of the ingredients & the browned beef into the crockpot & cook on low for 3-4 hours or high for 2-3 hours.
- Check that the vegetables are soft & the meat is fully cooked before serving.
- Let cool slightly & enjoy!
