DAIRY-FREE & GLUTEN-FREE Salted Caramel Banana Bread
This salted caramel banana bread is 100% dairy-free by using avocado oil or melted coconut oil.
I used my favourite gluten-free baking flour in this recipe to keep it gluten-free. This flour is so authentic & I often sub it 1:1 in regular recipes with great success! Definitely one I like to always have on hand for gluten-free baking!

MAKE THIS Salted Caramel Banana Bread INTO A LOAF OR MUFFINS:
Simply swap out a loaf pan in the recipe for a muffin pan to make these into yummy salted caramel banana bread muffins! Make sure to grease the muffin pan generously, or my preference, use liners for easy removal after baking. Note that if you make muffins the baking time will be significantly less, so just keep an eye on them & check them regularly.
PERFECT TO FREEZE FOR LATER
This banana bread can easily be frozen & enjoyed as desired. I like to pre-slice it & store it in individual baggies in the freezer so I can take each one out as needed. I like to re-heat it up in the oven or the microwave until the bread is nice & warm throughout & then top with some creamy & melty ghee or butter (coconut oil or almond butter is a great dairy-free topping). Such a drool-worthy combination!

CAN I MAKE THIS SALTED CARAMEL BANANA BREAD LOWER-SUGAR?
I have only tried this salted caramel banana bread with coconut sugar, which less refined than traditional white or brown sugar. But if you do want to make them lower in sugar I have a few alternatives I can recommend. If you do try any subs please let me know how they work out in the comments of this blog post so others will know what works & what doesn’t!
As I am sure you know by now, Lakanto is my go-to for lower sugar baking. I even made an eCookbook including it as my main sweetener of choice for most of the recipes! So if I was going to swap out the coconut sugar for something that won’t spike blood sugar I would use this. Note that you can use this in the caramel & the banana bread in place of the coconut sugar to make it lower in carbs & sugar!

Ingredients you will need:

- 1 can of full-fat coconut milk
- coconut sugar (or golden Lakanto for lower carb, or brown sugar)
- vanilla extract
- pink salt

- ripe bananas (about 3 bananas)
- vanilla extract
- pink salt
- baking soda
- collagen peptides*
- dairy free caramel sauce (recipe above)
- coconut sugar (or date sugar, brown sugar or golden Lakanto)
- gluten-free baking flour (this is my favourite)
- avocado oil (or melted butter oil or coconut oil for a dairy-free option)
- 2 eggs

Ingredients
Salted Caramel Sauce
- 1 can of full-fat coconut milk
- 1/2 cup coconut sugar (or golden Lakanto for lower carb, or brown sugar)
- 1 tsp vanilla extract
- 1/4 tsp pink salt
Salted Caramel Banana Bread
- 1 + 1/3 cup of ripe banana, mashed (about 3 bananas)
- 1 tsp vanilla extract
- 1/2 tsp pink salt
- 1 tsp baking soda
- 1/2 cup collagen peptides*
- 1/2 cup dairy free caramel sauce (recipe above)
- 1/4 cup coconut sugar (or date sugar, brown sugar or golden Lakanto)
- 1 + 3/4 cup gluten-free baking flour (this is my favourite)
- 2 tbsp avocado oil (or melted butter oil or coconut oil for a dairy-free option)
- 2 eggs
Instructions
Salted Caramel Sauce

Bring coconut milk & sweetener to a boil on medium heat, then reduce to a simmer.

Let simmer here for about 15-25 mins until it starts to thicken, & stirring regularly. Make sure to keep an eye on it & notice when it begins to thicken as well as ensure it is not burning or sticking to the bottom of the pot.

Once it has thickened remove from heat & mix in the vanilla & pink salt. Set aside & let cool.
Salted Caramel Banana Bread
- Pre-heat the oven to 350 degrees F.
- Line a loaf pan with parchment paper. I like to grease the ends with ghee & then line the parchment paper along the middle to easily pick up.
- In a large mixing bowl add your ingredients for the banana bread & mix together well, adding the eggs last just to combine. Note: make sure the caramel sauce has slightly cooled before adding.
- Pour the batter into you prepared pan.
- Bake for 55-65 minutes or until a fork or knife comes out relatively clean. The top should be browned & crispy/firm to the touch. Note that if you’re making muffins the baking time will be less, so check regularly. Baking times can also vary depending on the type of pan & your oven so just keep an eye on your bread while it bakes.
- Remove from the oven & let cool slightly before cutting or removing your loaf.
- Drizzle with the prepared salted caramel sauce, slice & enjoy!
Notes
*This recipe should work when the collagen is omitted. I haven’t tried it without in this recipe, specifically but all other recipes where I use it, they have turned out when omitted as well. You could try subbing your favourite protein powder in this recipe instead but every protein powder can vary significantly when baked. You may need to add a bit less flour to achieve the right consistency & texture when baked.
