This easy & healthy vegetarian Mexican pasta bake is full of nourishing ingredients that will help to fill you up, keep you satiated & fuel your day! It is also a great base to add whatever veggies you have on hand as well! Got some spinach that’s coming to its end? Throw it into the mix! It wilts up & becomes very small so you likely won’t even notice it is there & the dish will still be wonderful! I also love to throw cauliflower, broccoli & more into this recipe! It works great with most frozen veggies as well.
MAKE IT ONCE & EAT ALL WEEK
I love making this healthy vegetarian Mexican pasta bake at the start of the week & keeping it in the fridge for a meal in a pinch! It can easily be re-heated for leftover the next day or is just as good eaten chilled. I even find it tastes better the next day, so I definitely recommend making extra to have for leftovers!
I will re-heat this dish on the stovetop with a dash of broth to bring moisture to the dish or in the microwave if I am in a real pinch. I also enjoy eating it chilled straight from the fridge, so good!

This healthy vegetarian Mexican pasta bake is VERY quick to whip up. Prep your pasta, add in the salsa, frozen corn, cheese & spices then warm up & she is ready to eat! So even if you aren’t in the mood to cook or had a long day this won’t take too much time or effort to put together.

I made this healthy vegetarian Mexican pasta bake gluten-free by using chickpea pasta which was great! I love chickpea pasta for added fibre & protein as well. I also love this brown rice pasta for another gluten-free pasta option. But this recipe will work with any pasta, gluten-free or regular!
MAKE healthy vegetarian Mexican pasta bake DAIRY-FREE
This recipe can easily be made dairy-free by simply swapping the cheese for a dairy-free version. I love the Vio Life brand if you can find it. it is a vegan cheese & melts/tastes SO good! I did choose to serve this dish with regular cheese as I can tolerate dairy well. If you want to serve it with dairy-free cheese that is a great option as well! Or you can simply omit the cheese & this casserole will be just as delicious.

Description
This healthy vegetarian pasta bake is incredibly easy to throw together & makes for a super delicious weeknight meal & even better leftovers! Use a chickpea pasta for added plant based protein & fibre. Adult & kid approved!
Ingredients
- 1 box of pasta (I used chickpea pasta for added protein + fibre)
- 1 can black beans (425g), rinsed & drained
- 1 cup frozen corn
- 1 jar salsa (420g)
- 2 tbsp taco seasoning, plus more to sprinkle on top if desired
- salt & pepper to taste
- 1 cup cheese, plus more for the top (use dairy-free if desired)
Toppings
- olives, chopped green onion, cilantro, jalapeños, etc.
Instructions
- Prepare the pasta as per the directions on the box.
- Once cooked add the black beans, corn, salsa, cheese, seasoning, salt + pepper, to the prepared pasta in a casserole dish. Mix well.
- Add some more cheese on the top along with any toppings you would like.
- Bake at 400 F for about 15 minutes, until it it fully warmed & the cheese on top is melted.
- Enjoy!
