Description
This caramel apple banana bread is drizzled with a rich dairy-free & vegan salted caramel sauce & gooey caramelized apples. It is incredibly decadent, rich & has the most perfect texture all while being gluten, dairy & refined sugar-free! It is a must make for the fall!
Ingredients
Caramel Apple Banana Bread
- 1 + 1/3 cup of ripe banana, mashed (about 3 bananas)
- 1/2 cup unsweetened apple sauce
- 2 tbsp avocado oil (or melted butter oil or coconut oil for a dairy-free option)
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp cinnamon
- 1/2 tsp pink salt
- 1 tsp baking soda
- 1/2 cup collagen peptides*
- 1/4 cup coconut sugar (or date sugar, brown sugar or golden Lakanto)
- 1 + 3/4 cup gluten-free baking flour (this is my favourite)
Vegan Caramel Sauce
- 1 can of full-fat coconut milk
- 1/2 cup coconut sugar (or golden Lakanto for lower carb, or brown sugar)
- 1 tsp vanilla extract
- 1/4 tsp pink salt
Caramelized Apple Topping
- 1 tbsp coconut sugar
- 1 tbsp coconut oil (or avocado oil or refined coconut oil for no coconut-y taste)
- 1 apple, diced
- 1/2 tsp cinnamon
Instructions
Caramel Apple Banana Bread
- Pre-heat the oven to 350 degrees F.
- Line a loaf pan with parchment paper. I like to grease the ends with ghee & then line the parchment paper along the middle to easily pick up.
- In a large mixing bowl add your ingredients for the banana bread & mix together well, adding the eggs last just to combine.
- Pour the batter into you prepared pan.
- Bake for 55-65 minutes or until a fork or knife comes out relatively clean. The top should be browned & crispy/firm to the touch. Note that if you’re making muffins the baking time will be less, so check regularly. Baking times can also vary depending on the type of pan & your oven so just keep an eye on your bread while it bakes.
- Remove from the oven & let cool slightly before cutting or removing your loaf.
- Drizzle with the prepared vegan caramel sauce, & caramelized apples slice & enjoy!
Vegan Caramel Sauce

Bring coconut milk & sweetener to a boil on medium heat, then reduce to a simmer.

Let simmer here for about 15-25 mins until it starts to thicken, & stirring regularly. Make sure to keep an eye on it & notice when it begins to thicken as well as ensure it is not burning or sticking to the bottom of the pot.

Once it has thickened remove from heat & mix in the vanilla & pink salt. Set aside & let cool.
Caramelized Apple Topping
- Add the Apple, cinnamon & oil to a pan over medium-high heat.
- Cook for about 5 mins or until your apples are soft, stirring regularly so they don’t burn.
Notes
*This recipe should work when the collagen is omitted. I haven’t tried it without in this recipe, specifically but all other recipes where I use it, they have turned out when omitted as well. You could try subbing your favourite protein powder in this recipe instead but every protein powder can vary significantly when baked. You may need to add a bit less flour to achieve the right consistency & texture when baked.
